Vietnam street food: is Hanoi or Ho Chi Minh City better for a foodie?

Planning a 2 week Vietnam trip and trying to figure out where to spend more eating days. I’ve heard Hanoi has the more traditional food scene (pho, bun cha, egg coffee) and HCMC has more variety and fusion stuff.

Which city actually had better street food in your experience? And is the street food scene in Hoi An worth dedicating a full day to or is it more of a “eat a banh mi and move on” situation? I want to eat my way through the country and I have zero dietary restrictions. Hit me with your best food recommendations.
